Kill City Chili

Remember Sassy Magazine? Yep - back in the day when I was watching "My So Called Life", listening to The Cure and making Mix tapes, I was reading that magazine. This recipe from Jim Ryan (Guy Stuff comic strip) was published in Sassy but I could not find it anywhere online. Here it is - simple and delicious. I modified it slightly, but list the original ingredients in parentheses. Enjoy! It tastes better than the picture looks. Kill City Chili 3 T Olive Oil 2 1/2 lbs. ground beef 1/4 c. chile powder 2 1/2 T curry powder 1 large yellow onion - chopped 2 cloves garlic, minced 1 medium green bell pepper - stemmed, seeded and finely chopped 2 - 16 oz. cans red kidney beans drained and rinsed 1 - 28 oz can salsa with cilantro (or crushed tomatoes) Kosher Salt to taste Black Pepper to taste Cilantro to taste, chopped 1 c crumbled Queso Fresco (Monterey Jack cheese) for serving Sour Cream, for Serving Heat oil in a large skillet and brown the ground beef. Add chile and curry powder. Don't be afraid to let the powders get a little toasty in the skillet. Add the onion, garlic and bell pepper. Cook, stirring often until veggies are softened. Add the salsa, beans, salt and pepper (at this point, scape up the toasty powder bits from the bottom of the pan) and bring to a boil. Let reduce at medium heat stirring until the chili is the consistency you like it. Stir in the cilantro and serve. Top with the cheese and/or sour cream.
